Masala Quinoa (Kinwa)

Quinoa (kinwa), a species of goosefoot (Chenopodium), is a grain-like crop grown primarily for its edible seeds. It is a pseudocereal rather than a true cereal, or grain, as it is not a member of the grass family. As a chenopod, quinoa is closely related to species such as beets, spinach, and tumbleweeds.It is very rich in proteins.You can also find more info of this grain in the below link:

Ingredients:

Bayleaves: 2 count.
Cinnamon : 1 inch piece.
Cloves: 4 count.
GingerGarlic paste : 1 Tbsp.
Onion: 1/3 cup sliced.
Carrots: 1/3 cup sliced.
Peas: 1/4 cup.
Mushrooms: 2-3 count.
Spring onions : 2-3 count.
Capsicum( red / greem) : 1/2 cup sliced.
Sweetcorn : 1/4 cup.
Green chillies: 2-3 count.
Coriander : for garnish.
Quinoa : 2 1/2 cups.
Water : 5 cups.
Olive oil : 2 Tsps.
Salt : to taste.

  • In a hot pan add oil,bay leaves,cinnamon,cloves,gingergarlic paste and fry them for 2-3 mins.
  • Then add onion,chillies,carrot,capsicum,peas,sweet corn and cook for 3-4 mins.
  • Add water and salt and make it boil. Then add quinoa and cook for 15mins or until quinoa is well cooked.
  • Add Spring onion,coriander and roasted cashew nuts (optional) and lemon if you want to.
  • Serve and enjoy while it is hot….
