Gutti tomato curry….

Today I am back with a tasty recipe with tomatoes.When I first tasted from our good friend and neighbors Sudha, I liked it very much and wanted to try. I really liked this curry because, we usually add tomatoes as one of the ingredients in other vegetable curries, but this curry is particularly with tomatoes.It is also very quick, easy and simple to prepare.This curry goes well with rice and chapati as well.

Ingredients:

Tomatoes — 4 medium.
Onion — 1 big.
Ginger & Garlic Paste – 1 Tsp.
Cashews & Almonds – 10- 12 count.
Jeera powder – 1 Tsp.
Dhaniya powder – 2 Tsp.
Dry coconut powder – 2 Tsp.
Roasted Peanut powder – 1 Tsp.
Roasted Sesame seed powder – 1 Tsp.
Red chilli powder – 1 Tsp.
Tamarind juice – 1 Tsp.
Cilantro – 1/4 cup chopped.
Mint leaves – 1/8 cup chopped.
Turmeric – a pinch.
Salt – to taste.

  • Slit tomatoes into half and then another half ( as you do for gutti vankaya).
  • In a hot pan add some oil and cook them till they are tender.
  • Meanwhile Grind Onions,Ginger,Garlic,mint leaves,cilantro and nuts into a thick paste by adding water.
  • Add the grinded paste and all the other ingredients into the pan and mix well.
  • Cook for 10-15 mins and serve hot with roti or chapathi.
