Today I want to share a tasty recipe of potato fry. As a child I am not a good fan of potato, but when my Mom prepares this fry I used to have this fry while it was getting ready rather than having it in lunch/dinner….;). The secret ingredient for this recipe is cooking the potato pieces in water mixed with tamarind. Let us see items required for this recipe.
- Potatoes– 4 medium size.
- Tamarind juice–1/2 cup.
- Curry leaves– 4
- Red chilly powder– 1 tsp(as your taste).
- Salt– as your taste.
- Oil– 1/2 cup( for deep fry).
Cut potatoes into bite size pieces and cook them in water with the tamarind juice.Boil them till they are well cooked( not mashy). Strain them from the water and deep fry them in hot oil till all the edges are fried. Fry curry leaves before switching off the heat.Sprinkle some Red chilly powder and salt on the fry and mix them well. You can enjoy them as they are or good with plain rice or pickle rice.
