Quinoa (kinwa), a species of goosefoot (Chenopodium), is a grain-like crop grown primarily for its edible seeds. It is a pseudocereal rather than a true cereal, or grain, as it is not a member of the grass family. Ingredients:
Bayleaves: 2 count.
Cinnamon : 1 inch piece.
Cloves: 4 count.
GingerGarlic paste : 1 Tbsp.
Onion: 1/3 cup sliced.
Carrots: 1/3 cup sliced.
Peas: 1/4 cup.
Mushrooms: 2-3 count.
Spring onions : 2-3 count.
Capsicum( red / greem) : 1/2 cup sliced.
Sweetcorn : 1/4 cup.
Green chillies: 2-3 count.
Coriander : for garnish.
Quinoa : 2 1/2 cups.
Water : 5 cups.
Olive oil : 2 Tsps.
Salt : to taste.
In a hot pan add oil,bay leaves,cinnamon,cloves,gingergarlic paste and fry them for 2-3 mins.
Then add onion,chillies,carrot,capsicum,peas,sweet corn and cook for 3-4 mins.
Add water and salt and make it boil. Then add quinoa and cook for 15mins or until quinoa is well cooked.
Add Spring onion,coriander and roasted cashew nuts (optional) and lemon if you want to.
Serve and enjoy while it is hot….
